Buckwheat Pancakes
As long as I remember, pancakes has been a common meal in our household. My mom made the thinnest, most yummy crepes! Our favourite topping was real butter, brown sugar and a sprinkle of vinegar! Seriously delicious. Try it and you’ll be amazed!
Often, we’d have buckwheat pancakes. Back then I didn’t know they were good for me. Now that hubby and I have reduced the amount of meat in our diet, we welcome a variety of protein rich foods.
Buckwheat has SO many health benefits! The protein in buckwheat is a high quality protein, containing all eight essential amino acids, including lysine.

You can make buckwheat pancakes by using buckwheat flour in place of regular flour in your favourite recipe. Use all or partial amounts of Buckwheat. Alternately, you can use pancake mixes and add the buckwheat flour to the mix. When I use a ready-mix, I add almost equal amounts of ready-mix and buckwheat flour. Also, at the Bulk Barn, you can purchase a Buckwheat Pancake mix. I prefer the pure flour though.
Serve with fresh fruit and maple syrup or your favourite toppings!
