I call these PODs because the main three ingredients are Peanut Butter, oatmeal and dates! Who said yummy treats had to have high sugar and fat in them? These are really great for a quick snack that you don’t have to feel guilty about!
- 1/3 cup uncooked, whole flake oats
- 1/2 cup peanut butter [your choice of brand and type]
- 3/4 to 1 cup pitted dates
- 1 tablespoon hemp hearts
- 1 tablespoon ground chia seeds
Mix all ingredients in a food processor until the mixture sticks together. You may have to tweak the amounts a bit depending on how wet or dry it turns out. If too dry, add a bit more peanut butter or dates. Too wet, add more oatmeal. Even a drop or two of water helps make it stick together.
Scoop out by the teaspoonful and roll into balls or form into squares. It makes between 18 and 20 pieces.
