Sponge Toffee

Oh, how I remember those big bricks of golden Sponge Toffee I used to buy as a kid.  By the time I had popped a few pieces into my mouth, my tongue was sore from the melty goodness.  I enjoy the odd Crunchie bar now and then too, but there’s nothing like plain, old-fashioned sponge toffee! Mmmmm.

  • 1 cup white sugar [I use organic]
  • 1 cup corn syrup
  • 1 tbls vinegar
  • 1 tbls baking soda
  • 1/2 tsp molasses

Combine sugar, syrup and vinegar in large sauce pan.  Stir over medium heat until sugar is dissolved.
Continue to cook to 300F (hard crack stage).
Remove from heat,stir in baking soda quickly (will become frothy)
Pour into a buttered pan….but do not stir down.


Cool and break into pieces.
