THE Ultimate Bran Muffins

These muffins are SO good, you won’t believe they’re good for you!!  Seriously good muffins  :)

  • 1 1/2 cups natural bran
  • 3/4 cup flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 egg
  • 1/4 cup vegetable oil
  • 3/4 cup lightly packed brown sugar
  • 2 tlbs dark molasses
  • 1 cup buttermilk [or any milk with 2 tsp lemon juice]

Now, as usual…I do a little tweaking with my recipes.  Here’s a few options you can try:

Instead of natural bran, you can use All Bran cereal or even Raisin Bran.  Just make sure it is pure bran.  IF you use a sweetened cereal, be sure to reduce the amount of sugar in the recipe.

You can use an artificial sweetener powder if you want to keep calories lower or if you are cooking for a diabetic.

The original recipe doesn’t have fruit, but I always add whole cranberries, blueberries or raisins…or a mixture of.  I’m sure any of your favourite fruit would do…bananas, raspberries, etc!

If you are using Raisin Bran or All Bran, pre-soak for a few minutes in the buttermilk.

Lightly beat the egg.  Add brown sugar, oil, molasses….  {and the buttermilk if you haven’t already}.  Add fruit or raisins.  Mix together until just moistened.

Spoon into your favourite muffin pan.  Grease pan if necessary.  Depending on the size, it’ll make 6 - 10 muffins.

Bake at 375º for 18-23 minutes!
